To make one serving: melt coconut oil in a small pan over med/low heat. Add your banana and mash with a fork. Allow banana to soften and become fragrant.
Next, add in 2 eggs and mix them in with the banana. Continue to cook as you would scrambled eggs. Before the eggs set, add in a splash of almond milk (how much depends on how you like the consistency of your oatmeal) and some chia seeds. Incorporate and continue cooking until eggs are cooked through and desired consistency is reached.
To serve, pour banana egg scramble into a bowl and top with your berries, nuts, and any other toppings you would like. Add one more splash of almond milk and enjoy! Remember to be creative with your toppings and eat what you love!
