California Club Sandwich on a Sweet Potato Bun

- 1 large sweet potato, cut into 1/4-inch rounds
- 2 tbsp Primal Kitchen Avocado Oil Mayonnaise
- 2 tbsp mustard
- 8 oz turkey
- 4 slices bacon, cooked
- 2 bibb lettuce leaves
- 2 slices tomato
- 3-4 rings fresh red onion
- 1 avocado, sliced
Cook sweet potato rounds in 425* oven for 30 mins flipping in between and lightly coated in oil and salt.
Use mayo , mustard, turkey, bacon, lettuce, tomato, red onion, and avocado to complete the sandwich.
