Heat 2 tsp. ghee in nonstick skillet over medium-high heat until hot.
Break eggs and slip into pan, 1 at a time.
Cook until whites are completely set and yolks reach desired doneness. Season with salt and pepper.
Meanwhile, heat olive oil and about equal amount of ghee in a separate frying pan over medium heat. Add spinach and sautee, turning frequently, until wilted.
Plate greens and serve eggs on top.
Add a dash of Frank's Red Hot for an extra kick!
